So, I’ve been craving shaved ice or snow cones since the stands have opened in the last month. I have been trying to find a way to make a slushy that would satisfy my sweet tooth but not be loaded with the typical simple syrup base. Enter the watermelon limeade slushy.

It is way too early for watermelons but when I saw them at the grocery store the idea just kind of struck and I am glad because this drink was very refreshing!

Plus I’m a sucker for a good limeade (I actually prefer them over lemonades).

Watermelon Limeade Slushy

Ingredients:

  • 4-6 cups watermelon
  • 1-2 limes, juiced
  • 1/2 – 1″ piece fresh ginger (optional)
  • honey to taste
  • 4-6 cups ice (I froze coconut water and used it for my ice)

Directions:

I added all of the ingredients into my Vitamix, except for the ice (because there wasn’t enough room) blended until smooth and then added my ice and blended again. I used honey to taste because depending on how sweet or flavorful your watermelon is you might not need very much.

This makes a lot. It served me and 3 of my kids (can you believe one of them doesn’t like watermelon!) twice.

I also wanted to share why I choose some of my ingredients and the health benefits they provide, you’ll notice most of them are very beneficial when pregnant.

Watermelon – great for digestion & constipation (super important for us pregnant ladies 😉 ). Plus watermelon provides more lycopene than any other fruit or veggie. It is also a good source of vitamin A & C.

Coconut Water – super hydrating & high in potassium, which again is important for those leg cramps we get when pregnant. You can read more about the benefits of potassium here.

Ginger – great for morning sickness, reduces inflammation & helps with heartburn (YAY!).

Lime – again aids in digestion & constipation. Also high in vitamin C & flavonoids.

 

This was just what I needed and super satisfying! If you need something cool and refreshing without all of the added sugar you definitely need to try this Watermelon Limeade Slushy!
