Vegan Green Bean Stir Fry
- 1 lb green beans, trimmed
- 4 cloves garlic, minced
- 1/2 Tbsp sesame oil (I prefer toasted)
- pinch of salt
- a squirt of sriracha or dash of red pepper flakes (optional if you want some kick)
Boil green beans for 5-6 minutes, drain well.
Heat sesame oil over medium heat and saute garlic for about 1 minute, until nice and fragrant. Add green beans, salt & sriracha if using. Stir to get everything good and coated. Remove from heat and serve.
I like my green beans to still be crispy and crunchy. If you like yours on the softer side you can either boil them for a few minutes longer or stir fry them with the garlic for a bit longer. If you choose this method make sure you are stirring often enough that your garlic doesn’t burn. No Beuno!
If you like a spicy green bean and your family doesn’t I would recommend following the directions above but after the beans are coated with the garlic and sesame oil take out the beans for your family and keep your beans in. Add your Sriracha or pepper flakes and cook for about a minute and a half longer.
I have found that works the best. I’ve tried just adding the Sriracha or red pepper flakes just to what I have on my plate but I prefer the spice to be cooked a little bit, it just changes the flavor so it is less of a raw spice flavor.
