Last Wednesday, July 15th, was National Ice Cream Day. I have been trying to eat clean to get back on track but how could I pass up National Ice Cream Day without having ice cream! And then I decided to make my own!
Let me tell you how I came to this odd concoction.
I have actually never tried making the banana ice creams you see all over Pinterest but knew that they must work so I decided to make that my base. I didn’t want banana flavored ice cream really so I thought I would add the strawberries. I didn’t really know how the banana ice cream texture would be and I wanted the ice cream to be really creamy, I thought I would miss that fat component and I happened to have an avocado that needed to be used so I thought why not? Let’s give it a try!
And that is how I came to make Strawberry Avocado Ice Cream. The kids ate it and thought it was really good. Knowing me all too well though they wanted to know what crazy ingredient I had decided to hide in it. I think I got a collective eye roll from all 4 of them when I told them it was avocado. It made me smile!
Here you go, I hope you enjoy it as much as we did! 😀
- 1 cup frozen bananas
- 2 cups frozen strawberries
- 1 avocado
- about 1 Tablespoon raw honey (sorry, I didn’t measure)
- milk (I used unsweetened coconut milk) again I didn’t measure, I just added a little at a time to help the blender go, I would guess it was about 1 cup.
- Add bananas, strawberries, avocado, and honey into a high powered blender. Pour a little milk in maybe start with half a cup and blend until smooth, adding milk as needed. I had to use the tamper to my Vitamix to help keep the mixture moving.
- Serve and enjoy!
