I was trying to think of what I could do with some boiled shrimp and made this super delicious salad & citrus vinaigrette for lunch! Shrimp & Avocado Salad with Citrus Vinaigrette
- 1 Tbs. olive oil
- 2 tsp honey
- 1 tsp orange zest*
- 3 Tbs grapefruit or orange juice or a combination of the two (optional)
- 1/4 tsp. salt
- 1 grapefruit, sectioned
- 1 orange, sectioned
- 1 red bell pepper
- 1 avocado, chopped
- 2-4 Tbs. cilantro
- 2-4 Tbs. sunflower seeds
- 6 cups mixed lettuce greens
- 1 lb boiled or steamed shrimp (sauteing in a little garlic would be delicious too!)
In a medium bowl combine olive oil, honey, juice if using, orange zest & salt until well blended. Add the grapefruit, orange, bell pepper, avocado, cilantro & sunflower seeds. Gently toss and pour on top of your lettuce greens. Then top with your shrimp and you are ready to go!
* This Microplane is by far my most favorite tool to zest citrus fruit with. I highly recommend it.
There are lots of other veggies you could add to this salad too, this is just what I had on hand at home. However, I think cucumber, radishes, and red or green onion would add a nice touch to this also.
If you wanted to add some spice you could chop up a jalapeno or add red pepper flakes to the dressing.
If you are making this for lunch you could get two servings out of it. As a side salad, I’d say probably 4 – 6 servings.
