Garlic Sweet Potatoes Does It Get Better Than That?

I love roasted vegetables, it is probably one of the easiest ways to make veggies, in my opinion. These roasted garlic sweet potatoes certainly don’t disappoint!

This recipe is definitely a favorite of mine. I have been making these for a number of years now. Unfortunately, I can’t remember where the recipe originated from.

I actually usually prefer adding savory ingredients to my sweet potatoes, like in this recipe, over sweet. It makes the perfect combination of sweet and savory.

Roasted Garlic Sweet Potatoes


  • 4 -6 medium sweet potatoes
  • large pinch sea salt
  • pepper to taste
  • 4 Tbs garlic grapeseed oil, divided (or plain grapeseed or olive oil)
  • 4 – 6 cloves garlic, minced


Preheat oven to 400 degrees F. Cut up your sweet potatoes. This time I did a large chop on them but I have also made them into fries and wedges. Place in a large bowl and toss with salt, pepper and 3 Tbsp oil. Spread out on a baking sheet. For easy cleanup line your baking sheet with tin foil, parchment paper or a silicone baking mat. Roast in the oven for 30 – 40 minutes depending on the size of potatoes. Sometimes I stir them or turn them over half way through but not always, they turn out just fine either way.

While the sweet potatoes are roasting mix the remaining Tbsp oil with the minced garlic. When the sweet potatoes are fork tender brush the garlic oil mixture over the sweet potatoes and roast for another 2-3 minutes, to cook the garlic. Serve immediately.

These sweet potatoes are made pretty similarly to my roasted broccoli, with some minor differences.

Funny side story

I thought of this story while making these sweet potatoes and it made me smile so I thought I’d share with you. A few weeks back I went to a Young Women activity with my oldest daughter and they played a game with us mom’s kind of like the newlywed game. Anyway, the question was what is your mom’s favorite food and Sadie said mine was garlic. It made me laugh because I do love garlic and it is added to a large number of the dishes I make 😀 Unfortunately, we didn’t get a point because I hadn’t thought of garlic, not that it isn’t a food but I consider it more of an ingredient or garnish type of thing versus a food. 🙁 But I do love garlic.

      I think these would make an excellent side dish for Thanksgiving dinner & way healthier than the typical sweet potato casserole with the marshmallows on top.
