A Red White and Blue Popsicle is my Favorite
I love the 4th of July and all things themed. So a YUMMY Red White and Blue Popsicle is the perfect thing to have on Independence Day!
I like finding healthier ways to have old favorites and these were perfect. All of the family including aunts, uncles, cousins, brothers & sisters enjoyed these pops this year.
They were the perfect end to a wonderful BBQ with my family. Very refreshing in the 100-degree weather too! I got the inspiration for this tasty treat here.
Red White and Blue Popsicles
- 4 cups Strawberries (fresh or frozen)
- 2 cups Blueberries (fresh or frozen)
- 1/4 – 1/2 cup coconut butter
- coconut extract (optional & to taste)
- 4 cups milk (I used a combo of Almond and Coconut)
In a blender or food processor blend your strawberries with 1 cup milk. If using frozen you might want to let them thaw a little. If not you will probably need to add more milk.
Pour into your popsicle molds (or if you are less fancy you can use small Dixie cups) about 1/3 of the way up.
Place in freezer for about 15 minutes.
Meanwhile, blend your coconut butter with 1 1/2 to 2 cups of milk and coconut extract (if you want to amp up the coconut flavor). I originally used 1 cup of shredded coconut instead of the butter and it was a little grainy, the coconut butter had a much better texture.
Gently pour coconut milk mixture over your strawberry mix about another third of the way up and place back into the freezer for another 20 minutes.
While that is in the freezer take your 2 cups of blueberries and one cup of milk and blend in a blender or food processor.
Gently pour over the coconut mixture and place your popsicle sticks gently into the molds. Return to the freezer until completely frozen. If you used frozen fruit it probably won’t take as long to freeze completely but I would recommend a few hours at least.
This recipe made 12 dixie cup size popsicles plus 7 popsicle molds that are a pretty decent size. I made these for the family BBQ that included extended family so we had to serve quite a few people. Adjust ingredients accordingly for your family. It is more about the consistency of the puree then it is following the recipe exactly.
Enjoy these anytime….Just because they are red, white, and blue doesn’t mean you can only enjoy them on patriotic holidays!
