Day 17 of 30 Day Recipe Challenge
This is an easy way to make a healthier coleslaw.
Think about it, the typical coleslaw is closer to a mayo/cabbage soup. This recipe has a secret spicy ingredient, plus showcases all the ingredients.
The picture below shows the main coleslaw ingredients. The “pep” in this recipe is the spicy pepper.
- 4-6 cups shredded cabbage
- 1 cup shredded carrot
- 1 spicy pepper, finely diced with seeds removed
- 1/2 cup diced red onion
- 1/4 cup apple cider vinegar
- 1 tbsp mustard
- 1/4 tsp sea salt
- 1 tbsp avocado oil (or other oil you have handy)
In a large bowl, combine all the vegetable ingredients. In small bowl, mix all the dressing ingredients with a fork or whisk (vinegar, oil, mustard and salt). Then slowly fold the dressing into the coleslaw bowl until well combined.
This recipe is actually best on Day 2. Not sure what makes it better, but it’s better. I’m not the only one who says so.
