This No Bake Paleo Protein Balls Recipe is so yummy! When I created them they were just meant to be an easy snack. Let me tell you these are also a perfect healthy sweet treat. The kids love them. My son said they tasted a little bit like cookie dough.
So these raw energy balls are also gluten free & grain free and packed with protein plus you can make them vegan by one simple swap.

No Bake Paleo Protein Balls Recipe
- 1 cup raw almonds
- 1 cup shredded, unsweetened coconut
- pinch of salt
- 1 tsp vanilla
- 2 – 4 Tbsp honey (or pure maple syrup if vegan)
Put the almonds in the food processor and pulse until almonds are chopped, leaving them a little chunky (as seen in the picture to the right). Add coconut & salt, pulse some more until combined.
Add vanilla and honey or maple syrup and pulse again until the mixture is wet and sticky.
With damp hands shape the mixture into balls. This was more of a squeezing them into a ball shape for me vs. rolling into a ball because they don’t stick together well enough for that.
You will want to continue wetting your hands until all of the raw energy balls are formed. This helps them stick to your hands a little less.
Store in the fridge or freezer.
These paleo energy bites don’t last long around here so I almost never have the chance to put them in the freezer. Although one nice thing about them being on the sweeter side is the kids don’t inhale them nearly as fast as some of the other protein ball recipes I make.
