When I began my journey to a healthier me I started by making some easy substitutions and I found that in most recipes I could sub avocado in for mayonnaise quite easily.  Once again I have found that because of the creaminess of the avocado you do not miss the mayonnaise one bit!photo 4

Healthy Broccoli Salad

Dressing:

  • 1 Tbls Whole-Grain Mustard
  • 1 Tbls Balsamic Vinegar
  • 3 Tbls Extra Virgin Olive Oil

Whisk the dressing ingredients together in a large bowl and then toss in the following:

  • 1 large head of Broccoli, chopped
  • 2 Carrots, shredded
  • 1 Avocado, diced
  • 1/4 – 1/3 cup Almonds, roughly chopped
  • 1/4 cup sunflower seeds

Stir to coat evenly in dressing.  Serve and enjoy!
