When I began my journey to a healthier me I started by making some easy substitutions and I found that in most recipes I could sub avocado in for mayonnaise quite easily. Once again I have found that because of the creaminess of the avocado you do not miss the mayonnaise one bit!
Healthy Broccoli Salad
- 1 Tbls Whole-Grain Mustard
- 1 Tbls Balsamic Vinegar
- 3 Tbls Extra Virgin Olive Oil
Whisk the dressing ingredients together in a large bowl and then toss in the following:
- 1 large head of Broccoli, chopped
- 2 Carrots, shredded
- 1 Avocado, diced
- 1/4 – 1/3 cup Almonds, roughly chopped
- 1/4 cup sunflower seeds
Stir to coat evenly in dressing. Serve and enjoy!
