Day 20 of 30 Day Recipe Challenge
Organic mango has been on sale at the local supermarket so I bought a few.
I am not a huge mango eater so I was trying to be creative on ways to eat it aside from smoothies. (Almost everything is good in a smoothie).
I decided on a Mango Cilantro Lime Dressing (based on what I had available at home, which is often how inspiration works for me).
I made this dressing to serve over baked salmon filets, but I ended up putting a dollop of it on my basmati and zucchini rice dish as well.
Also, I used dried cilantro as I never use all of the fresh cilantro when I buy it, so I finally admitted that I should just buy dried as I hate wasting food.
- Pulp of 1 mango
- 2 tbsp dried cilantro (more if you really like that flavor)
- juice of 1/2 a lime
- 1/2 cup greek yogurt
- 1/2 tsp raw honey
- ground pepper to taste
I put all ingredients in my blender until mixed well. It only takes a minute.
