What To Make With Leftover Stuffing and Turkey

Now that you’ve seen all of the family and cleaned up the massive mess that entertaining always brings with it, you peer into your refrigerator and what do you see? leftovers upon leftovers.

Sometimes it is a little overwhelming and you have no idea what to make with leftover stuffing and turkey, cranberries and sweet potatoes, au gratins and oh my goodness, the list goes on and on sometimes.

There is, of course, the obvious turkey sandwich, that is obligatory (and super tasty on homemade rolls) but you can only have so many sandwiches and so many just reheated dishes of the same meal.

Stuffing, in my opinion, can be a tough leftover to do new things with. Until I made it into a chili, a little crazy, I know. I’ve been coming around to stuffing. It isn’t my favorite to just sit down and eat but I really like the flavor it adds to this Stuffing and Turkey Chili.

Leftover Stuffing and Turkey Chili

 

Ingredients:

  • 1 onion, diced
  • 2 ribs of celery, diced
  • 2 carrots, diced or shredded
  • 1 Tbsp oil
  • 1/4 cup favorite chili seasoning
  • 4 cups broth (chicken, turkey or bone)
  • 2 cups water
  • 3 cans beans (drained & rinsed) – I used white, pinto and baby butter but I think just about any bean would work great
  • 1 can green chilis
  • 2 cups leftover turkey (or even chicken)*
  • 2 cups leftover stuffing (thickens the chili & adds flavor)

Directions:

Heat a large pot over medium heat, saute onion, celery & carrots in 1 Tbsp oil, until crisp-tender. Add chili seasoning and stir for 30 – 60 seconds, it should be nice and fragrant. Add rest of ingredients, stir occasionally until boiling. Reduce heat to medium-low, cover and simmer for 20 – 30 minutes, or until all the veggies are tender.

Chili is almost always better the longer it sits. So I often make this in the morning and then just heat it up for dinner or make ahead for the next day.

 

Extra Tip – Especially if you don’t have leftover turkey:

*You do not have to use fresh turkey or chicken. If you end up with leftover stuffing and no bird you can sub in canned chicken. I used my own canned chicken in a lot of recipes to save time. If you want to know how to can your own chicken, download this How To Can Chicken PDF Guide
