Seriously they taste like a double stuffed peanut butter cup. I say double stuffed because they have more peanut butter than a typical Reeses Cup. If you are planning on going to a cookie exchange party or just like to make plates of cookies to give to friends and neighbors around the holidays you will want to include these Healthy Peanut Butter Balls.
Sometimes making healthy Christmas treats can be challenging because of the special ingredients or extra steps. These cookies are gluten free, dairy free and low carb and I didn’t even have to do anything or buy anything special. Perfect for those in your life who have intolerances.
Healthy Peanut Butter Balls
- 1 cup peanuts (I like dry roasted)
- 1 cup raisins
- 1/2 cup peanut butter
- 2 tsp vanilla
- 8 oz dark chocolate
Place all ingredients except for the dark chocolate in a food processor, mix until it becomes a soft, dough-like substance. You might need to scrape down the sides a time or two but the dough will start coming together and balling up in the processor.
If the dough doesn’t start to ball up or it is a little too sticky add a little bit of water, one tablespoon at a time until the mixture is workable.
Once it is mixed well start making little balls. I use the smallest of these three scoops and they give me the perfect size ball. Place the balls on a cookie sheet that is in parchment paper or a silicone mat. Place in the freezer to chill for a few minutes while you prepare the dark chocolate.
Melt your dark chocolate, either on the stove top, using the double boiler method or in the microwave.*
Drop your peanut butter balls, one at a time in the melted chocolate. Roll it around using a fork or a spoon so it is completely covered. Scoop the ball out and place it on a cookie sheet (again lined with something like a silicone mat or parchment).
Once all of the balls are dipped place them in the fridge or the freezer until the chocolate is set.
*Tips on melting chocolate via the microwave
I would put the chocolate in a deep vs. wide bowl that is microwave safe (or maybe even a mug). Start with 30-second intervals, stirring in between each one. Once the chocolate starts to actually look a little melty but it back to 15-second intervals stirring in between each time still. Until the mixture is all melted and smooth.
If you overheat the chocolate it will start to break down and it gets clumpy, burnt and just all around unappetizing.
