Fall foods are some of my most favorite foods. Definitely, comfort food season for me! These Healthy Gingerbread Muffins are one of those foods to me. Really fresh gingerbread anything is that for me …. soft gingerbread molasses cookies … I mean come on! ūüėČ

I don’t think I’m alone in that. Fall¬†foods are one of the foods that people look forward to every year. I think partially because of the special occasions that they represent.

That is one of the reasons I love these muffins. They are easy to make, healthy and hit all of the right notes for me.

Healthy Gingerbread Muffins



  • 1 egg
  • 1/2 cup plain Greek yogurt
  • 1/2 cup coconut oil, melted
  • 1/2 cup milk of your choice
  • 1/2 cup pure maple syrup
  • 1/3 cup molasses
  • 1 Tbsp fresh grated ginger
  • 1.5 cups flour
  • 1 cup whole wheat flour
  • 1.5 tsp¬†baking soda
  • 2 tsp cinnamon


Preheat your oven to 375 F and grease your muffin pan or use cupcake liners. Take a medium bowl and whip your egg with the Greek yogurt, coconut oil, milk, maple syrup, molasses and ginger. In a large bowl mix all of your dry ingredients; both flours, baking soda and cinnamon. Add your wet ingredients into your dry and mix until combined.

I use the largest of these ice cream scoops and spoon the muffin mix into the tin, they are a perfect size. You can also just use a spoon and fill 2/3 to 3/4 of the way full. Bake until the tops rice and are nice and puffy (about 10 – 15 minutes). Cool and serve. My family really enjoyed spreading this pumpkin butter on top of our muffins!
