It can be hard to find a healthy breakfast idea for school that the kids like and are also quick and easy. I like making a good breakfast bowl like the recipe below because I can make the bowl ahead of time and just warm it up when I’m ready.
One of the reasons cereal is so popular is because it is so easy. So if I can make something healthy like this ahead of time it is just as fast as grabbing a bowl of sugary, not so healthy cereal. With the maple syrup and fruit, I find this dish plenty sweet. This makes the perfect healthy breakfast before school or work.

Healthy Breakfast Idea for School: Quinoa Breakfast Bowl
2 cups almond milk
1 cup quinoa
2 Tbsp pure maple syrup
2 tsp pumpkin pie spice or (1 tsp cinnamon, ½ tsp nutmeg, ½ tsp ginger)
½ cup applesauce or when pears are in season pear sauce is yummy too
2 tsp vanilla extract
fresh fruit (apples, pears, bananas, berries, etc.)
nuts or nut butters (pecans, walnuts, almonds, pistachios, cashews etc.)
seeds (chia, ground flax, sunflower, pumpkin, etc.)
extra milk, honey or maple syrup
Bring 2 cups almond milk to a boil, add quinoa, syrup & spice, reduce heat to a simmer. Cook for 15 minutes. Take off the heat and let sit for 5 – 10 minutes, still covered. No peaking, you will let all the heat out of the pot.
After the 5 – 10 minutes are up add in applesauce and vanilla, toss with a fork. Divide into bowls and add toppings.
Breakfast Bowl Tips
*You can totally use plain leftover quinoa if you have it.
Store any extra in airtight containers in the fridge. If it is a little dry when you reheat it add a splash of milk and it will loosen right up.
You can also freeze this quinoa bowl in individual sized containers (without the toppings).
