Day 23 of 30 Day Recipe Challenge

This makes an excellent side dish, but sometimes I even have it for lunch! 

I love the crunch from adding in the sunflower seeds (not to mention the extra protein).




  • 1 lb fresh green beans, ends trimmed off
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup sunflower seeds


Over medium heat, sauté the trimmed green beans and minced garlic in the olive oil for about 5 minutes.  Add the sunflower seeds and gently toss for about 3 or more minutes, or until the sunflower seeds are slightly browned.
