We love making these easy stuffed peppers. It is a great way to use leftover meat and grains from the week.

That is one of the ways I meal plan. I often cook a large batch of grains to use for the whole week or cook double the meat we are going to use so that I have a quick and easy dinner I can throw together later in the week.

It is a lifesaver for those busy nights when everybody is going in different directions.

In the recipe, I gave you directions on how I make this without leftovers and then in the notes below that I tell you how I make it when I’m using this as a leftover dish.

Easy Stuffed Peppers

Ingredients:

  • 1.5 lbs ground beef
  • 1 onion diced
  • 1 cup celery, diced
  • 1/2 cup carrots, diced or shredded
  • 3-4 cloves garlic, minced
  • 1 cup cooked grains (rice, quinoa, barley, etc.)
  • 6 bell peppers, any color
  • 1 tsp each of salt & pepper
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 cup spinach, roughly chopped
  • 2 Tbsp cilantro, chopped

Directions:

Preheat oven to 350 degrees F. Heat large pan over medium-high heat. Saute onion, celery & carrots. Add garlic and cook for about 30 seconds, until nice and fragrant. Add ground beef and cook until browned. Season with salt, pepper, chili powder, cumin, coriander & grains. Stir until well incorporated. Remove from heat and add spinach & cilantro. Mix well.

While the meat is cooking cut off the top of your bell peppers & remove the seeds and ribs on the inside of the pepper. Stuff the meat mixture into the peppers and place in a baking dish. Add about 2 Tbsp of water to the bottom of the pan and cover with foil. Cook for 50 –  60 minutes. Remove from oven and serve.

Notes on Easy Stuffed Peppers:

  1. I often cheat with this meal and use leftover taco or sloppy joe meat. Which I actually did in these pictures.

2. In my taco and sloppy joe meat, I saute onion, celery, carrots & garlic. Cool slightly and then blend in my blender. I add that to the browned and seasoned ground beef. That way I’m adding a little more veg and it looks “normal” for the kids and husband. In this recipe, I think that is less important because they don’t have a preconceived notion of what it should look like.

3. If you are more in the mood for an Italian flavor sub the chili powder, cumin & coriander with 2 Tbsp Italian seasoning & the cilantro with chopped fresh basil.

That is one of the nice things about these easy stuffed peppers is that with minimal changes you get a new flavor and a brand new dish.
