Vibrant & Fresh: The BEST Cucumber Salad Ever!

My favorite time of the year is when the first of the produce comes on in my garden!! I am especially excited about this cucumber salad!

The garden is already overflowing with cucumbers, spaghetti squash (although they are not ready to be picked yet) and lots of peppers (I may have gone a little crazy with my pepper plants). Plus my very first red tomato!  I am always the most excited for my tomatoes.  Nothing beats the flavor of a homegrown tomato!!

Since I have such a plethora of cucumbers I decided to make my go-to cucumber salad recipe this weekend.  I have been making this for years and it is really my favorite cucumber salad, I originally found the recipe here.

Cucumber Salad:

Salad:
6 large cucumbers, sliced thin*
1 medium tomato, sliced
1 medium onion, sliced
1 Tbsp salt

Dressing:
1/2 cup cider vinegar
4 Tbsp olive oil
2 Tbsp honey
1 tsp celery salt
1 tsp dried basil
1 tsp ground mustard
1 tsp garlic powder
1/2-1 tsp salt (to taste)
1/2 tsp dried oregano
Couple dashes of cayenne pepper

* I use a mandoline to slice the cucumbers, tomato & onion, it makes it super quick and makes nice even cuts.

Toss the sliced cucumbers with the tablespoon of salt and put in the colander, let stand for 30 minutes or so to draw the water out of the cucumbers.

While the cucumbers are draining I whisk together all of the dressing ingredients in a large bowl and slice up the onion and tomato (you could dice too if you prefer).  Then I toss the cucumbers, onion and tomato into the dressing.  I usually try to refrigerate the salad for 20-30 minutes to let the cucumbers marinate and soak up the flavors but it is not mandatory.

The cucumbers still loose a lot of water and it takes me several days to eat all of this salad so I often scoop out some of the dressing from the cucumber bowl and put it on top of a green salad too.  It makes a very tasty dressing.  Or even add the cucumbers and dressing on top of a green salad.
