Day 11 of 30 Day Recipe Challenge
I grew up on potatoes. Maybe it’s because I live in Idaho, land of famous potatoes. My love for potatoes still exists, but because they are so high glycemic and cause a blood sugar spike it’s great to find alternatives when you can.
This cauliflower mash is one of my favorite substitutes, because let’s be honest . . .
I can’t completely give up mashed potatoes.
This is not a perfect substitute, but it definitely gives me that comfort food feeling. If you think your kids (and maybe even hubby) won’t buy this switch up, you can transition them by adding this cauliflower mash to your regular mashed potatoes and add more of it each time you prepare it until they are used to the change. It worked for my family.
- 1 large head of cauliflower
- 2 tbsp olive oil
- 1 tsp sea salt
- 1 tbsp oregano
Cut cauliflower into 1-2 inch pieces, even the stem. Steam cauliflower until tender, about 10 minutes. Place in a large mixing bowl with the olive oil, sea salt and oregano. Mash until everything is thoroughly blended. I use my high powered blender to get a very creamy texture. Serve as a savory substitute for mashed potatoes.
