The Best Lemon Chicken Orzo Soup Perfect For Fall

Last week I talked about 6 Easy Tips for a Healthy Thanksgiving and I mentioned this Lemon Chicken Orzo Soup as a great way to use leftover turkey. So I thought it would be kind to share the recipe with you :D. Just sub turkey in for the chicken.

Lemon Chicken Orzo Soup

Ingredients

  • 10 cups chicken broth or bone broth
  • 3/4 cup orzo pasta
  • 4 eggs, lightly beaten with a fork
  • juice of one lemon
  • zest of one lemon*
  • 1-2 cups cooked chicken chopped or shredded
  • 1/2 bunch kale, chopped
  • salt & pepper to taste
  • parmesan for topping

Directions

In a large pot bring your broth to a boil over high heat. Add the orzo and cook for 5 minutes. Slowly pour eggs into chicken broth while you stir the soup, continue stirring for about a minute or until the eggs are cooked in threads (this is how you make egg drop soup, just as a side note) Add the remaining ingredients, except the parmesan. Return to a boil and then remove from heat. Ladle into bowls and top with freshly grated parmesan.

* This Microplane is by far my most favorite tool to zest citrus fruit with. I highly recommend it.

 

Tricks and tips with this soup

I learned the egg trick watching a cooking show to add a little extra protein and goodness. The first time I was a little intimidated and worried I would have scrambled eggs in the soup which didn’t sound tasty at all. It isn’t nearly as intimidating as I thought it would be. Just make sure you are constantly stirring and slowly drizzling in the egg and is easy peasy.

Also, I freeze my kale, which makes it so easy to put in things like soup. I wash it, remove the stem and just put in a baggie. Then after it is frozen I just crunch up the bag (or squeeze it) in my hand. Since it is frozen and brittle it breaks easily. It does all of the chopping for me, SUPER easy! Great to do with leftover fresh kale you don’t get used up.

This soup is so easy and the lemon makes it so bright and perfect for a fall or winter pick-me-up. I have found that I prefer it over the typical chicken noodle soup when I’m feeling under the weather.
